Pork CT Butt
Pork Collar, or CT Butt, is the intensely marbled cut that comes from the top of the shoulder between the neck and the tip of the loin. This is the cut that the Italians use for Coppa, and that competition pit master’s refer to as “the money muscle”.
Heritage Farms Cheshire Pork breeding gives our CT Butt perfect marbling and great flavor.
This versatile and succulent boneless cut is excellent roasted, braised, or cut into chops and grilled.
